Yesterday made balsamic pork tenderloin, baked potato, steamed buttered carrots with roasted garlic and herbs, and some more homemade French onion soup with melted mozzarella cheese baked on top.
Today good old pot roast with potatoes and carrots.
later in the week smoked kielbasa, scallop potatoes and green beans.
Rice and sweet and sour chicken.
Should be finishing up the french onion and will be attempting to make the irish whiskey onion soup. End of week or next week.
I make by mashed potatoes with russets boil them whole with skins on and then run through the potato ricer. Add butter and a little Half/Half. Cooking with the skins adds to the flavor. I was told to steam my potatoes so today i cut the potatoes in 1/8 pieces with skins on and steamed in a garlic, butter water bath. Ran then ran through the potato ricer, added butter and a lot more cream. ( steaming, the potatoes do not get water logged ) Whole new taste to the mashed potato. Those who have not used a potato ricer it pretty much squeezes the potato out of the skin so no peeling.
