This is a simple cake to make, that’s not too sweet—it can be if you want to.
Dry ingredients
1 cup spelt flour
½ cup chestnut flour or make up with ground almond or spelt
½ tsp baking soda
¼ tsp salt
3 bags of Clipper lemon and ginger infusion
½ tsp ground ginger
Handful walnuts
Handful of dates—chopped
Mix all the above
Wet ingredients
1 cup plant milk
1 tbsp apple cider vinegar
Mix above two first and leave for 5/10 minutes then add:
⅓ cup olive oil
¼ coconut sugar or equivalent
Mix
Preheat oven at Gas 5 or 160°C. Line baking tin with baking parchment.
Mix wet and dry ingredients and pour into tin and bake for 20 minutes. Check with skewer should be done—otherwise bake for another 5 to 10 minutes. Remove from oven and lift out of tin and let it cool. Serve with thick yoghurt if you want.
